Used this recipe: Wild Yeast’s Norwich Sourdough
Overall, a success! Some thoughts:
- Should have let the loaves proof on parchment paper or a baking mat, rather than in a couche. I had issues getting the loaves off the couche and onto the baking sheet, so 3 out of 4 loaves were very deflated and never quite recovered.
- Do not recommend using in a loaf pan. I tried this with one loaf but the bottom became charred. Other loaves didn’t suffer this problem.
Definitely one of the most delicious breads I’ve attempted so far. A+
